Would a samurai like character work?
So could I have a witch-knight of a previously unknown Knightly Order (because Imma gonna make one up) that has been stuck in a time paradox/loop thing for hundreds of years and eventually freed by the Knights Templar?

The Order of the Maple was a small Knightly Order. Knights of this order wore iconic green armor, though a ranking system could be seen in the style and secondary colors used on the armor. Oddly enough, the leaders of this order wear red armor, not green, meaning they stick out rather prominently on the field of battle. A religious Order, they do not follow the Christian religion as so many others do, but instead worship a deity of nature dubbed The Lady. Honor and Oath bound, the Knights of the Order of the Maple have gone any many crusades and quests in the name of The Lady. And it is not unheard of for members to disappear while on these adventures.
Nah, they can be an order that's for the most part died out. Maybe, and I mean maybe, there's one family that's still in the Order, but as a whole they'd be a part of the Knight's Templar. Maybe they were the ones that pointed to the general location to find my character. Yeah, probably that.
History, they used to be a followers of some other religion, most likely an Abrahamic religion, that were fleeing something and found The Lady, which I'm planning to secretly have been a dryad, and began worshiping her. The Lady began dolling out blessings to those that did violence in her name, and so the religious order began to become more militaristic and eventually turning completely into a knightly order.
Yeah sure, not sure how important of a role she'll play though.
^ That brings up a good point. How far back can we go? Are Vikings acceptable, or are they too barbaric to be deemed knights? How about something like a Roman soldier? Can we play actual historical figures, or do we need to come up with OCs? Sorry for all the questions, I'm just really getting into character creation now. c:
Edit: On a note related to character creation. Are we doing appearance reference pictures? Real life face claims? Realistic art? No pictures and just written descriptions?
Art, maybe realistic art. For the Black Knight I was going to use something like this:
Preferably we could use two pictures for our characters. Both using art. One of their faces/bodies/general appearance. And a second picture of their armor and equipment?
Historical figures and any characters from myth or folklore, certainly. Yes. God damn it YES! OCs are awesome but if you can take a historical/mythical character and make them your own, then do it.
And Vikings are certainly allowed. Particularly since they're not as barbaric as many believe. Roman soldiers too, I was even thinking of throwing in a Greek Myrmidon character As for the characters being resurrected, an Einherjar is perfect for this roleplay has they would simply return from Valhalla.
Really, a character just has to meet two requirements:
1) They are highly trained in ancient warfare.
2) They follow some code of conduct, such as a knight's chivalry or a samurai's honor. Romans have a sense of duty so they fit this. Vikings want glory in life, battle, and even death, which is their form of honor. The Myrmidon I mentioned was going to be similar to the Vikings, but instead of fighting gloriously to get into Valhalla, he was going to perform heroic deeds to get into Elysium.
