Also, weird question. Would Damaya be able to take a Jedi/Sith apprentice to help her cover?
 
Of course, Grey Jedi can take on Apprentices, and if you mean like take one on as a cover for being a Jedi, than of course, though the Apprentice might be vengeful if you deceive them for too long or some other circumstance i can't think of.

Since m level is 7k or so, does that limit the strength of my Jedi?
 
No, your Jedi can have that amount and become stronger than Mogana who has 9k if your character trains alot.
