Awesome sauce XD. Since they are already cannon characters, do you still want to create a character sheet, or just jump right into the roleplay(after establishing a plot of course)?
 
I may sound incredibly stupid but whats a character sheet

A character sheet is something that basically describes details about the character that you will be roleplaying with. They usually contain things such as the character's name, age, personality, appearance, history, etc. The questions asked on the character sheet can vary from roleplay to roleplay, but that's the gist of it ^_^
 
Well all we need is a setting and a situation
 
It could be in Death City, perhaps the very beginning of Maka and Soul's Meister and Weapon partnership. I can imagine they had quite a rocky beginning.
