The simplified version of how Holo (and any "launcher" app) works is that it totally replaces the look/feel of your phone's default OS. You can use it consistently (open up the launcher app and set it as the deafult launcher in your settings- normally the app will tell you how to do this). Or you can use it for special occasions (your phone will ask you which launcher to use, select Holo "just once" for whatever it is you're opening).
I do the "just once" thing while installing different launchers to see if I like them or not. Then when I find one I like, I set it as default and just forget about it. There's a "Computer Launcher" if you ever want to make your phone look/act like a desktop computer (and thoroughly confuse you for a few minutes as you hectically try to figure out how to uninstall it when you realize you don't like it like you thought you would! LOL)
SwiftKey works by replacing your default keyboard. It has really awesome word prediction. And you can use "flow" (which is totally optional) which is dragging your finger along letters to create words instead of actually typing them. The keyboard can also have a somewhat custom layout, better alternative language input/prediction, skins/themes, better placement, etc. Also has limited (optional again) gestures support.
Definitely check out SwiftKey!
I can understand if anyone thinks launchers are way too complicated and doesn't want to try them because of that, though. XD
SwiftKey is super simple to use/figure out, however.
