Bigger ships are less maneuverable than smaller ones. That is probably what you are thinking of.
because scifi Apache gunship helicopter as a space fighter.
Alright , that sounds good by me.If it exists in Star Wars, by all means. Otherwise, that might be a bit confusing for continuity. But again, these are all things we should clear up before the OoC.
Also, @Shayla, I'll send you a PM later to talk about your villain characters.
Holograms is basically just a phone call. It is always better to interact with someone face to face. There's always a good'ol T3 as well, but it is kind of a generic 'Star Wars' ship. That being said, having something familiar isn't bad at all, but I think I'll ultimately put it to a vote.
I'll post images and add links to the Wookiepedia page below this so people can see what the ships are like, then we'll let the group decide.
If we did different ships for people on the same side, @EddiEddi, then that might get a bit confusing. Besides, there's always interaction on the main ship, so having two separate ones for the heroes would leave the person/people in the other ship more or less out of the loop (I'm ignoring the fact that holograms exist for now because that would get a bit too nit-picky)

allow me to introduce theIsn't the Warthog from Halo?
well thats the point. there are weapons that match what it has in the SW lore, so its a pretty fair conversion. its also a matter of lore vs fun. I can understand not having a SR-71 blackbird (because the acceleration would kill you). but then again, I could just work on another in cannon idea I had.I'd keep it within the realm of SW lore, otherwise I could pull say the FALKEN from Ace Combat 5 and zero because it's a closed cockpit with a 360 degree camera view, and just change it so it could fly in space and have armaments similar to say a TIE-defender or interceptor
